Old-Fashioned Banana Bread Muffins

What you will need:
- 1/2 cup unsalted butter (at room temperature)
- 1 cup sugar
- 2 large eggs
- 4 large overripe bananas, mashed
- 1tsp vanilla
- 1 3/4 cups flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp fine sea salt
- 1 cup chopped walnuts (optional)
Directions:
- Preheat oven to 350°F.
- In a stand mixer, blend butter and sugar together. Add eggs, vanilla and mix. Add mashed bananas.
- In a separate bowl, mix together the dry ingredients. Combine in the stand mixer with the wet ingredients until just combined. Do not over mix.
- Fold in the chopped walnuts, if desired.
- Spoon into a greased or lined muffin tin, until cavities are 3/4 full.
- Bake for 10-15 minutes, or until an inserted toothpick comes out clean.
- Enjoy warm out of the oven, cut in half with some butter!
Banana Bread Loaf Option:
This recipe can also be baked as a traditional banana bread loaf. Pour the batter into a greased or parchment-lined loaf pan and bake for approximately 1 hour, or until an inserted toothpick comes out clean.
